The dish for a long, slow oven braise — a shoulder of lamb, a bean stew, a pot roast that cooks for hours and comes to the table in the same pot. The lid traps steam so the meat stays moist, and the heavy sage stoneware holds a low, even heat that suits an unhurried cook.
Oven-safe stoneware through body and lid, high-fired in oxidation to 1260°C, glazed in the house sage. Full and lidded it holds 3.5 litres — enough to feed a table — and keeps the food hot well after it leaves the oven.
It's a heavy pot, and heavier again full and hot. Lift it with both hands and dry oven gloves; the flush handles give you less to grip than a metal casserole's long arms, so plan the trip to the table before you pick it up.
