A 26 cm dish for a proper pie, sweet or savoury, with a fluted rim that gives you an edge to crimp pastry against and helps it hold a scalloped crust. The stoneware pulls heat into the base, so a bottom crust bakes through rather than staying slack — the failing of a thin metal tin.
Oven-safe sage stoneware, high-fired in oxidation, glazed like the rest of the bakeware. It carries a quiche or a tart to the table without a second dish to plate it onto.
Stoneware heats more slowly than metal, so a base is best blind-baked before a wet filling goes in. Skip that step and a very juicy filling can leave the underside softer than you'd like.
