Shallow and oval, which is the shape a gratin wants — a wide surface for the top to brown and bubble, and not so deep that the middle stays pale while the edges catch. Good for a dauphinoise, a baked egg dish, a fruit crumble for two or three, a small fish baked whole.
Oven-safe sage stoneware, high-fired in oxidation, glazed to match the range. It comes out of the oven ready to set down on the table, holding its heat while it's passed around.
The shallow depth that browns a top so well also means it fills quickly — a saucy dish will climb to the rim, so it suits bakes you want crisp and spread rather than deep and stewed.
